Vegan diets have had a lot of press recently, whether you’ve been vegan since childhood, recently converted or flex when and how often you eat meat. The news is, eating a more plant based diet has benefits for us and the planet!
If you read my recent blog on Vegan Dogs you’ll know some are choosing to introduce a more plant based lifestyle to their canine friends also.
So with that in mind, and inspired by vegan week on GBBO. I wanted to have a go at a Vegan recipe. This includes Lentils and Quinoa for protein plus a healthy dose of Flaxseed oil for Omega 3 – which tends to come from meat and fish normally. If you are worried your dog may not go for it, Its also got a healthy amount of Peanut Butter in it to entice them.
- 75g Brown rice rinsed and drained
- 75g Puy Lentils
- 75g Quinoa
- 1 large Sweet Potato
- 200g Peanut Butter
- Optional 1/4 Red Cabbage (I threw this in as needed to use it up)
- 100ml Apple cider vinegar
- 4-6 tbsp Flaxseed oil (Store in the fridge)
Step by Step Instructions
Fill a large saucepan 3/4’s full with cold water and bring to the boil
Meanwhile peel and chop the sweet potato and finely shred the red cabbage
Add the rice, lentils, quinoa and sweet potato to the boiling water and simmer for 40 mins until fully coked
Once fully cooked, drain any excess water out of the pan and using a potato masher or fork, mash together, adding in the peanut butter, apple cider vinegar and red cabbage (if using)
Cool completely before serving. I placed half in Tupperware and froze
Before serving, add in one tbsp of flaxseed to each serving
